Stuffed Peppers


When you get a CSA share you really don’t get a lot of choice in what comes in your bag each week.  So a few weeks ago, I got six peppers I wasn’t sure what to do with them until my sister reminded me of this great stuffed peppers recipe. I added a little couscous to bulk mine up, you definitely don’t have to and it’s not included in the recipe below.

Ingredients:
4-6 bell peppers (preferably lots of different colors)
1 can of black beans
chopped tomatoes
2 tsp. cornstarch
1 tsp. salt
1 tsp. oregano (optional)
1 cup grated cheese (cheddar is usually really great but you can experiment)

1.    In a small saucepan dissolve the cornstarch in the tomatoes.  Heat over a medium flame, stirring, until the mixture thickens slightly.
2.    Stir in salt and oregano, then the black beans and half the grated cheese. 
3.    Spoon the mixture into the green pepper shells and sprinkle the reserved cheese on top.
4.    Place the stuffed peppers in an oiled casserole or baking pan. Bake at 350° until the peppers are tender, 30-40 minutes.
